Picture this..... It's a dreamy Summer day at 85 degrees. You're headed to the pool with your favorite people. You spend the day basking in the Sunshine with your favorite drink in hand. You know that drink, that is filled to the top with ice, the GOOD ice that is crunchy and crisp and makes your drink that much more delicious. And then you head home late in the evening with your sunkissed skin, and you are famished because you have been swimming and lounging all day. But it's still hot, and you don't feel like eating something hot. So you look in your fridge and that's when you realize you have all the ingredients for the PERFECT summer salad!! (cue your happy dance!)

So let me just tell you about this PERFECT summer salad. It was love at first taste with me and this salad. I even requested it for my B-day lunch, so you know it must be good! Let's be girls we eat A LOT of salad and it's hard to impress us. But I promise this salad is that good! And because we are BFF's we going to share the recipe with you!



  • Fresh Greens (Romaine, Spring Greens)

  • Shredded Chicken ( Shred one from the grocery store, so easy)

  • Chopped tomatoes (wedges or cherry)

  • Diced avocado

  • Big chunks of Goat cheese

  • Sliced, toasted almonds

  • Cornbread Croutons ( make cornbread from TJ's, cool it, cube it, brush it with a little butter and salt and pepper and then bake at 400 until crisp)

  • Black Pepper

  • Chopped Dates


  • 2 Tbsp spicy brown mustard

  • 1/4 cup lemon juice

  • 1 tsp apple cider vinegar

  • 2 tsp brown sugar

  • 1/2 tsp kosher salt

  • 1/4 tsp black pepper

  • 1 Tbsp fresh garlic (2 cloves)

  • 1/4 tsp dried basil

  • 1/3 tsp dried oregano

  • 1 cup of EVOO

Now you are ready for the PERFECT Summer! :)
