Orange Caprese Salad

I'm always looking for a quick and easy, but refreshing and tasty, side for my summer time parties. This Orange Caprese Salad is the perfect fit! Its vibrant colors and beautiful presentation will be the perfect complement to any summer menu.


Medium red onion, thinly sliced

4 navel oranges and 2 blood oranges (optional)

Red wine vinegar

5 vine ripe tomatoes

Burrata cheese (or fresh mozzarella)

Fresh basil

Olive oil

Salt and pepper

Marinate the sliced onions in red wine vinegar and juice from one orange for one hour. Layer sliced tomato, onion, sliced orange, sliced cheese, and basil. Repeat. Drizzle olive oil and salt and pepper on top.
