Key Lime Cheesecake Recipe

Summer is almost here!! Yay!!

With the temps rising this time of year I always crave treats that are both citrus and sweet. There is something about adding citrus to a dessert that tricks you into feeling refreshed instead of regretful. And when you can indulge in round 2 and not feel guilty then that's a WIN for everyone! This recipe is SO EASY and is a favorite with everyone who tries it. It is the perfect addition to a backyard BBQ or the most delicious snack on a hot sunny day. It's also ideal for last minute dessert ideas. :) So treat yourself, don't cheat yourself...You will be SO happy you did!

1 Sleeve Graham Crackers

2 TBSP Brown Sugar

3 TBSP Butter, Melted

8 oz Cream Cheese, Softened

1/3 Cup Key Lime Juice, Freshly Squeezed

2 TBSP Lime Zest

1 tub of Cool Whip

Key Lime Slices Cut in Half (optional)

In a food processor, crush graham crackers, brown sugar and melted butter together until fine crumbs form.

Place about 1/3 cup of crumbs into the bottom of the jar and press into the bottom and up the side a little to form a crust.

Wipe out the food processor and cream together cream cheese, juice, condensed milk and zest together until well blended. Fold in the Cool Whip until smooth.

Divided mixture evenly between all the jars. Spread the tops evenly.

Chill for 1 hour before serving. Garnish with a dollop of whipped cream and lime slice.
