Pesto Cream Sauce - Perfect for St. Patrick's Day dinner!

I don’t know about you and your family, but we are a family that LOVES cream sauce. The kids would eat it every night if they had it their way.  I have several different kinds of cream sauce recipes that I use, but we recently came up with a new one for St. Patricks Day and it has become a new family favorite!  It is simple, quick to make, and your kids are sure to love it.

Pesto Cream Sauce

1 T butter

2 C heavy whipping cream

A dash of salt and pepper (to taste)

A dash of freshly ground nutmeg

1 1/2 C shredded parmesan cheese

1 T pesto (pre-made pesto sauce from a jar)

Spinach tortellini with cheese filling

Melt 1 T of butter in a non-stick skillet. Add heavy cream, a dash of salt and pepper to taste, and a dash of freshly ground nutmeg. Stir on medium heat until hot - but not boiling. Add shredded parmesan cheese and stir constantly until cheese has melted and sauce has thickened (about 7-8 minutes).  If it starts to boil reduce heat.  Once cream sauce has thickened, add 1 T of pesto sauce and stir.

For St. Patrick’s day we like to pour our pesto cream sauce over spinach tortellini with cheese filling. It is also good over plain pasta with parmesan sprinkled on top or as a pizza sauce.

Note: 1 T of pesto sauce will give the cream sauce a slight green color which is perfect for your green dinner on St. Patrick’s day, yet not too green or over powering with pesto flavor so your picky kids won’t want to eat it. If you want more of a pesto flavor add more pesto sauce.  Enjoy!
