Peach Recipes

Being surrounded by the beautiful Del Monte peach orchards, it only seemed right to have peaches on the menu. It was a warm spring day so some fresh squeezed peach lemonade was the perfect beverage to quench our thirst.  It took us a few tries, but I think we found the perfect balance of sweet peaches and zesty lemons. And now we are obsessed!

Sweet Peach Lemonade

6 C Water

1 C Sugar

4 Lemons

1 Can Diced Del Monte Peaches

Bring 2 cups of water and 1 cup of sugar to a boil. Set aside and refrigerate.  Juice 4 lemons (about 1 cup) Drain canned peaches (for less sweet version rinse peaches with water). Blend lemon juice and canned peaches in a blender until pureed. Strain mixture. Add peach puree to cold sugar water and add remaining 4 cups of water.  Mix well and pour over ice. Enjoy!

To compliment the main dish we created this light and delicious peach fruit salad.  We came up with this simple, yet elegant recipe that was a huge hit with our guests! We can't wait for you to try it too.

Peachy Pecan Fruit Salad

1 Can Diced Del Monte Peaches

1 8oz Container of Fresh Mozzarella Pearls

1 Small Basket of Fresh Blueberries

1 Basket of Fresh Strawberries

Orange Dressing (recipe below)

Sugared Pecans (recipe below)

Dice strawberries. Rinse and pat dry canned peaches. Mix peaches, mozzarella pearls, blueberries and diced strawberries together.

Orange dressing

1 T Dry Italian Dressing Mix

2 T Sugar

1-2 T Red Wine Vinegar

1 Orange

1/2 C Vegetable Oil

Mix all ingredients well and drizzle over fruit salad.

Candied Pecans

1/2 C White Sugar

1 C Chopped Pecans

Mix sugar and pecans in a non stick skillet stirring continuously for abut 10 minutes. The sugar will start to melt and coat the pecans. Continue to stir until the sugar is dissolved and immediately remove from pan. Sprinkle over the top of the fruit salad for added flavor and a crunchy texture.
